A dish I created years ago which I call saffron rice with spicy shrimp, the spices and saffron gives it a unique taste and the peppers make it hot and spicy while the yogurt cools it down (This recipe can be adjusted with fewer peppers if it's too spicy).
Ingredients
3 tbsp olive oil
2 pounds of shrimp (peeled)
2 yellow saffron long grain rice 10 oz bags
7 cups water
16 oz frozen green peas
5 green long hot peppers (chopped fine)
2 red hot pepper (chopped fine)
3 jalapeño peppers (chopped fine)
1 green pepper (chopped fine)
2 red peppers (chopped fine)
1 yellow pepper (chopped fine)
1 orange pepper (chopped fine)
1 large sweet onion (chopped fine)
½ tsp. salt
¼ tsp. ground black pepper
Instructions
Add olive oil to large pot, turn on med-high
Add onions and salt, sauté for about 5 mins
Add sweet peppers, (green, yellow, orange, red) sauté for additional 5 mins
Add hot peppers (green long hot, red hot, jalapeno) sauté for 3 mins
Add saffron rice, sauté for 3 mins on med-high (stirring frequently)
Add 3⅓ cups water and bring to boil stirring frequently
Once boiling add additional 3⅓ cups water and bring to boil while stirring frequently
Add shrimp, stir and bring back to boil stirring frequently
Once boiling, set heat to low, cover pot and simmer for 15-18 mins
Place frozen peas on top and replace cover and continue cooking for 5 mins
Turn heat off, stir, cover, and let sit for 8 mins before serving, Enjoy!
Notes
Serve with yogurt and salad.
I used a gas stove so cook times may vary.
