Rice Pudding

I have been making this for many years. It has been passed down to me from a previous generation and it's my son's favorite. Try it you won't be disappointed, everyone will love it.
  • ½ cup of long grain rice
  • ½ cup of sugar
  • one quart plus 2 cups of whole milk divided
  • one teaspoon of vanilla extract
  • one beaten egg
  • pinch of salt (optional)
  1. Pour hot water over ½ cup of rice. Drain and pour into pot. Add ½ cup of sugar and one quart (32 oz) of whole milk and bring to a boil. (do not use a lid) Turn heat down to simmer for 45 minutes. Stirring occasionally.
  2. Add one teaspoon of vanilla, pinch of salt, one beaten egg and two cups of remaining milk. Bring to a boil for a few minutes. Pour into festive serving dish and sprinkle with cinnamon.
