This recipe for pumpkin risotto is one of the best dishes of the history of the time. Risotto is an Italian dish where cooked rice in a broth using a specific technique. Cheese is often added at the end of the process, although this recipe doesn’t use cheese and its taste is absolutely incredible.

3 cups of water 2 cups of squash, diced oil of coconut 1 teaspoon (or olive oil) 1 small onion, diced 2-3 Tablespoons of fresh thyme (or 1 tablespoon dried) 1 cup short grain rice sea salt heated 1/2 cup of white wine black pepper Optional: pumpkin seeds

The ingredients of the recipe risotto are easy to assemble. For starters, the squash in a pot of boiling. You can also steam it. Heat the water in a saucepan and keep just below boiling. Heat a third boat medium (last boat, I promise) and add the oil and the onion. Layer of the onion in oil and cooked until that is translucent, but not brown. If you are using dried thyme, do so now. Otherwise, the fresh thyme can wait until the end of this process. Add rice and stir to coat oil. Pour the wine and stir until it is absorbed. Add 2 teaspoons of sea salt. Add water heated to 1/2 cup of rice at a time, stirring constantly until that absorbs the liquid before adding more. Use all 3 cups of water for a very creamy risotto, or only 2-2 1/2 cups for a sticky risotto. When the liquid is absorbed, the rice should be smooth, but barely cooked (to the dente). You can then remove on squash. Decorate your recipe for risotto of squash with cracked black pepper and pumpkin seeds roasted optionally to better food than ever before.
