Ingredients you will need:
2 teaspoons lemon juice
1/4 teaspoon salt
1 cup wild rice, already cooked (use directions on rice package)
1 cup brown rice, already cooked (use directions on rice package)
1 cup broccoli, chopped
1/2 cup carrots, sliced
1 cup yellow squash, chopped
1/2 cup onions, chopped
1 1/2 tablespoons salted butter
Zesty Wild Rice Cooking Directions
In a large pan, over medium heat, melt the butter. Add the onions and sauté until they are transparent. Add the carrots, broccoli and squash and cook, while stirring, for 5 minutes.
Using a spoon with straining slots, remove the vegetables and place in a separate dish for now.
In the large pan, add the lemon juice and swish it around to mix it with the buttery glaze. Add the wild and brown rice. Add the salt and stir. Stir in the sautéed vegetables. Reduce heat to low and let cook for 2 minutes, stirring occasionally.
