Recipe for coconut rice

Ingredients for the recipe for coconut rice.

 

Rice white long grain 2 cups Oz (400 g/13.)
1 sheet of pandan, tied in a knot (see note)
Cream of coconut 3/4 cup (185 ml/6 fl oz)

 

Indications for the recipe for coconut rice:

 

1 Wash the rice in water until the water runs clear, and then transfer to a large bowl and cover with cold water of 1 liter (32 fl oz). Set aside to soak for 30 minutes and then drain well.
2 Put 3 cups (750 ml/24 fl oz) boiling water. Add the rice leaf of they pandan and salt to taste. Reduce heat and cook, covered, for 12 minutes, or until the rice is cooked and tender.
3 Remove rice from heat and add Coconut cream. Remove a little carefully to not break the rice grains. Cover the pan and set aside for 10 minutes or until the rice has absorbed the cream of coconut. Lift the sheet of they pandan and discarded before serving.

They pandan leaves, also known as pandanus or screw pine leaves, used to wrap and flavor of the food. They are available in Asian stores.
