Rice cake (torta di riso) is an Italian dessert recipes of egg, rice, cheese, ricotta and citrus fruits. 1 Beat the eggs in a large bowl. Add sugar, mix well. Remove ricotta and vanilla until smooth. Add the cream and stir. Double rice and crushed pineapples or skin of lemon juice.

3 Bake at 325 degrees f for one hour-top must be gilded; toothpick test. Refrigerate until cooled completely. It tastes better with divisions and served at a temperature from your plate baking.
