“I created this recipe while living overseas in Kuwait. I love the Mediterranean rice dishes and the spicy Indian dishes so I combined the two and came up with this dish.  I named it: SAFFRON RICE WITH SPICY SHRIMP, the spices and saffron gives it a unique taste and the peppers make it hot and spicy while the yogurt cools it all down (This recipe can be adjusted with fewer peppers if it’s too spicy). Saffron Rice with Spicy Shrimp Recipe

A dish I created years ago which I call saffron rice with spicy shrimp, the spices and saffron gives it a unique taste and the peppers make it hot and spicy while the yogurt cools it down (This recipe can be adjusted with fewer peppers if it’s too spicy).
Ingredients
  • 3 tbsp olive oil
  • 2 pounds of shrimp (peeled)
  • 2 yellow saffron long grain rice 10 oz bags
  • 7 cups water
  • 16 oz frozen green peas
  • 5 green long hot peppers (chopped fine)
  • 2 red hot pepper (chopped fine)
  • 3 jalapeño peppers (chopped fine)
  • 1 green pepper (chopped fine)
  • 2 red peppers (chopped fine)
  • 1 yellow pepper (chopped fine)
  • 1 orange pepper (chopped fine)
  • 1 large sweet onion (chopped fine)
  • ½ tsp. salt
  • ¼ tsp. ground black pepper

Instructions
  1. Add olive oil to large pot, turn on med-high
  2. Add onions and salt, sauté for about 5 mins
  3. Add sweet peppers, (green, yellow, orange, red) sauté for additional 5 mins
  4. Add hot peppers (green long hot, red hot, jalapeno) sauté for 3 mins
  5. Add saffron rice, sauté for 3 mins on med-high (stirring frequently)
  6. Add 3⅓ cups water and bring to boil stirring frequently
  7. Once boiling add additional 3⅓ cups water and bring to boil while stirring frequently
  8. Add shrimp, stir and bring back to boil stirring frequently
  9. Once boiling, set heat to low, cover pot and simmer for 15-18 mins
  10. Place frozen peas on top and replace cover and continue cooking for 5 mins
  11. Turn heat off, stir, cover, and let sit for 8 mins before serving, Enjoy!

Notes
Serve with yogurt and salad. I used a gas stove so cook times may vary.

    Mmmmmm I made this last night for dinner and it was so good! I am a critic about food and a real picky eater but this gets an A in my book! Even my picky kids ate it with lots of yoguart of course:) I made it with a few less peppers for the girls and extra for us adults. It was great both ways. Must try at least once, but be warned, you’ll be hooked

    made this two nights ago yum! i cut way down on the hot peppers for my two kids but they ate it up. i love the balance of the heat from the peppers the spice from the saffron and the cool smooth flavor of the yogurt. i love byblos yogurt the best and i served ours with pita bread.

  5. have always been an incredibly big fan of saffron rice. When my father was still a truck driver, he brought home some packages of it.
